Crocin is a water-soluble carotenoid pigment in saffron (Crocus sativus L.) with anti-inflammatory, antioxidant, anti-apoptosis, anti-asthma, anti-cancer, anti-allergy, relaxation of smooth muscle and hypolipidemic effects.
